Swiss Chard and Bean Soup

A delicious soup for a cold night. Enjoy with some crusty bread or rolls. Throw it all in the crock pot and dinner is ready after a long day.

4-5 cups swiss chard
1 zucchini, chopped
1 small squash, chopped
1 onion, chopped
2 carrots, peeled and chopped
14 ounces chicken broth
15 ounces beans, drained and rinsed
3 garlic cloves, minced
2 tablespoons olive oil
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon dried oregano
1 teaspoon dried thyme

Method
Combine all ingredients in crock pot and slow cook for 6-8 hours.

Old Fashioned Corn, Sausage and Potato Chowder

2 1/2 cups cooked corn
2 cups diced potatoes
1 tablespoon butter
1/4 cup onion, diced
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups chicken stock
4 cooked chicken sausages sliced (choose your own favorite sausage)
1 tablespoon flour, mixed with
1/4 cup minced spinach

Method
In a large pot combine all ingredients.
Slow cook until potatoes are fork tender.
Bring to a boil and allow to cook for 10 minutes.
Serve with chopped green onion and shredded cheese as a garnish.

Italian Minestrone Soup

Italian Minestrone Soup

2 quarts stock (chicken, beef or vegetable)
2 potatoes cubed
4 cups mixed vegetables (carrots, green beans, celery, etc.)
1/2 cup diced spinach
8 cups tomatoes (crushed/diced/pureed)
1 lb. cooked red kidney beans
3 bay leaves
1 teaspoon parsley
4-6 Italian Style sausages (sliced and cooked)
2 gloves crushed garlic
2 green onions (diced)
pepper (to taste)

Method
Add all ingredients to a large soup pot and cook over low heat for 4-6 hours.

Tuscan Sausage and Potato Soup

Tuscan Sausage and Potato Soup

4-5 cups chicken stock
2 cups potatoes, diced 1/2″
1 cup chopped spinach or other greens like Kale (optional)
1 lb. Italian sausage (sweet or hot)
Fresh Italian parsley, chopped
1/2 cup heavy cream
1/4 tsp. salt
1/4 cup diced carrots
Crushed red pepper flakes, to taste

Method
Remove the sausage from its casings and sauté the sausage in a skillet or dutch oven until brown.
Drain on paper towels and reserve.
Add to a large stock pot the chicken broth, sausage, potatoes, carrots and parsley.
Simmer soup until potatoes are tender at least 30 minutes.
Add spinach and cook until completely wilted.
Add cream and simmer a few minutes until thickened.
Add salt and pepper flakes to taste and serve.
