Gluten Free Zucchini Muffins Recipe
1 1/2 cups rice flour
1 teaspoon cinnamon
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup vegetable oil
2 eggs
1 cup zucchini, shredded
1 cup nuts (optional)
1/2 teaspoon vanilla extract
1/2 teaspoon poppy seeds

Preheat oven to 350 degrees F.
Combine all ingredients in mixing bowl.
Beat at medium speed scraping bowl, until all blended.
Pour into greased muffin tin or cupcake liners.
Bake for 25 minutes and check muffins.
Bake an additional 10 minutes or until a wooden pick comes out clean.
