Orange Candied Sweet Potatoes
6 medium sweet potatoes
1/3 cup packed brown sugar
3 tablespoons butter
1 large orange
1/2 teaspoon pumpkin pie spice
Place sweet potatoes in 2-quart sauce pan; add enough water to cover potatoes.
Heat to boiling; reduce heat.
Cover and simmer for 20 to 25 minutes or until tender when pierced with a fork; drain.
When potatoes are cool enough to handle, slip off skins; cut potatoes into 1/2 slices.
In a 10-inch skillet, heat remaining ingredients over medium heat, stirring constantly, until smooth and bubbly.
Gently stir until glazed and hot.
