Easy Banana Bread

Don’t throw away those bananas that are brown and soft. Turn them into some tasty banana bread.

1 cup sugar
1/4 cup brown sugar
1/2 cup apple sauce
1/4 vegetable oil
2 large eggs
3 medium ripe bananas (mashed)
1/2 cup milk
1 teaspoon lemon juice
1 teaspoon vanilla
2 1/2 cups pastry flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup chopped nuts (optional)

Move oven rack to low position so that tops of pans will be in center of oven.
Heat oven to 350 degrees.
Grease bottoms of two loaf pans (8 x 4-inch).
In a large bowl, stir in sugars, apple sauce and oil until well mixed.
Stir in eggs until well mixed.
Stir in bananas, milk, lemon juice and vanilla until mixed.
Stir in flour, baking soda, cinnamon, salt just until moistened.
Stir in nuts.
Divide batter evenly between 8-inch pans.
Bake loaves for about 1 hour or until toothpick inserted in center comes out clean.
Cool 10 minutes in pans on wire rack.
Loosen sides of loaves from pans; remove from pans and place top side up on wire rack.
Cool completely, about 2 hours, before slicing.
Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.
