Sausage and Bean Casserole

4-6 Italian style sausage (I used buffalo style chicken sausage)
1 teaspoon olive oil
1 onion
2 garlic gloves chopped
14 oz. cooked pinto beans
14 oz. cooked northern beans
14 oz. chopped tomatoes
6 oz. mild chillies
pepper to taste

Prick the Italian sausages all over with fork.
Cook them, under a preheated grill (broiler), for 10-12 minutes until brown.
Set aside and keep warm.
Heat the oil in a large skillet.
Add the onion and garlic to the skillet and cook for 5 minutes, stirring occasionally or until softened.
Add the tomatoes to the skillet and leave mixture to simmer for about 5 minutes, until slightly thickened.
Stir in the beans, chillies and sausages.
Cook for 4-5 minutes or until piping hot.
Add a little water if needed.
Transfer Italian sausage and bean casserole to serving plates and serve with mashed potato or rice.
