Baked Salmon and Red Potatoes

2 wild caught salmon fillets
4 red potatoes
2 sweet onions
2 pats butter
1 teaspoon crushed garlic
2 tablespoons lemon juice
2 wheat crackers

Scrub and boil 4 red potatoes.
Place salmon and the four boiled potatoes in baking dish with two pats butter, 2 sliced sweet onions, 2 wheat crackers (crumbled), 1 teaspoon crushed garlic and 2 tablespoons lemon juice.
Broil salmon for 15 minutes.

Coconut Bundt Cake with Pineapple

2 cups sugar
1 cup butter
5 eggs
1 teaspoon coconut flavoring
1 cup milk
2 cups flour
1 cup flaked coconut

Preheat the oven to 350 degrees.
Grease and flour a 10 inch bundt pan.
Cream butter, and sugar together until light, in a large bowl.
Add your eggs to the cream mixture one egg at a time and beat well. Add your coconut flavoring.
Alternate adding your flour and your milk, make sure to mix well after each.
Fold in your coconut and pour into your bundt pan.
Bake until toothpick comes out clean when inserted, about 1 hour.

Cake Toppings

1 sliced pineapple
1/3 cup sweetened condensed milk
1 cup powered sugar
1/2 teaspoon vanilla
1 cup flaked coconut

In a small bowl mix sweetened condensed milk, powdered sugar and vanilla.
Drizzle icing over cake.
Sprinkle cake with flaked coconut.
Add sliced pineapple as desired.
